Tutorial Tuesday : Dahi Baray

Assalamualaikum!

Can you believe its the 15th of Ramadan already? it really saddens me to think how fast Ramadan is slipping away from us with all its blessings :'( I hope we all make the most of the days left  ^_^

So its Tuesday again! and we thought since its Ramadan why don't we share a recipe of a typical dish we have for Iftar ! So we're going to be blogging about a special Pakistani dish which is mostly eaten as a appetizer, it consists of fried doughnut shaped dumplings made of lentils called Baray in whipped yogurt which is known as dahi in urdu, hence it's name Dahi Baray!


It's pretty simple to be honest and kinda light!

We'll be using a special tool that's made for this purpose of making the wholes in the center  their called Vada maker,  if you don't have one you can make them without the holes and simply drop them in the oil with a spoon.

So lets start with the Ingredients-
For Baray-
  • mash lentils- 250 grams
  • water to soak lentils in - as required
  • ginger - 1 teaspoon
  • salt- 1 teaspoon
  • oil for frying
  • crushed red chili -1 teaspoon
  • baking powder- 1 teaspoon
  • cumin seeds- 1 teaspoon

And the Method-


First soak the lentil in water for 5-6 hours or overnight. 
Then wash the lentils and put them in a blender and add very little water almost 1/4 cup we have to keep the paste almost like a cake batter but a little thicker. Then add crushed red chili, salt, ginger , baking powder, cumin seeds and blend it! 

Now we have to deep fry it in a normal frying pan not a deep frying pan as you can see in the picture below and fry till golden brown and crispy on medium flame. You could use a vada maker to make a doughnut like Baray or if you don't own one you could use a tablespoon to drop them into the oil carefully to get round shaped Baray.


Now cool the fried baray for almost 30 mins. At this point if you want to freeze in order to use them later you can put them in an air tight container and freeze it! Now take some Luke warm water and add salt 1/2 tsp into it, crushed red chili 1 teaspoon, cumin seeds 1 teaspoon (dried,roasted and then crushed) and place the fried baray or frozen baray  in the water. After half an hour check if the baray are spongy, when you think their spongy enough then drain all the water and squeeze each baray gently with the palm of your hands and remove all its water.

The steps to frying the Baray, soaking them in water and serving them.

Assembling:
Take yogurt as required add sugar and salt according to your taste and whip it till smooth , then take a shallow dish, spread half of the Yogurt into dish and layer baray on top of it, then add the remaining yogurt on top and garnish with sweet n sour tamarind chutney, sev, fresh coriander, green chilies (chopped) and chaat masala. Sprinkle red chilli powder to add color to your dish ! You can skip some of the garnishes if you dont have them, like the pic below we have only added sweet n sour tamarind chutney and Sev!

Dahi Baray made simply with a spoon instead of Vada maker!

Voila! your Dahi baray are ready!
